What Is a Pie Pumpkin?

Before getting into the directions for baking the pumpkin pie, it's important to first understand what a pie pumpkin is. This term refers to pumpkins that are good for making pies. They will have drier flesh that is more starchy than watery. Since a pumpkin pie is basically a custard, this starchiness will help it set better. Pie pumpkins will be anywhere from 4-10 pounds and will be smaller than those usually used for carving. It's important that you don't use a huge pumpkin because these will usually have less flavor since the flavor will be distributed throughout a larger pumpkin. Larger pumpkins also tend to be more watery, making their texture less ideal for the pie you're trying to make. If you're excited for the return of fall because it means fresh baked goods and delicious, warm beverages, you're not alone. Steps to Make Pumpkin Pie

1. The first thing you will want to do is prepare your pumpkin. Start by cutting it in half and remove the seeds. (You can set these aside to eat later.) Once the seeds are removed, place the pumpkin halves cut-side down on a microwave safe dish that isn't completely flat. Add about an inch of water to the dish, cover it, and put it in the microwave for about 15 minutes on high. Your pumpkin halves should be very tender after this, but if not, leave them in for longer. 2. Next, grab your pie crust pastry and use a rolling pin to get it into a 9 inch circle or the right size to fit your pie tin. Transfer your pastry to your tin carefully and trim the edges to about half an inch beyond the tin's edge. Flute the edges carefully and set this aside. 3. Once your pumpkin has cooled down a bit, drain any excess liquid, scoop out the pulp, and mash it up. Measure one and three quarters cups of this mush and save the rest for later. 4. Now combine your pumpkin mush with the eggs, sugar, cinnamon, salt, ginger, and cloves. Beat this mixture until it's smooth and then gradually beat in the milk. Once the mixture is nice and smooth, pour it into your pie crust. 5. Bake your pie for 15 minutes at 425 degrees. After the initial 15 minutes, reduce the temperature to 350 degrees and let your pie bake for another 40 minutes or until you're able to stick a knife in it and remove it cleanly. If the edges start to brown too quickly, cover these in aluminum foil to prevent burning. 6. Once your pie is ready, pull it out of the oven using an oven bit and set it on a wire rack and allow it to cool down. Once it's cool, it's ready to serve. Grab your whipped cream or any other topping of your choice and enjoy!
