 If you’ve yet to experience the wonders of quinoa, you might want to consider it. It’s very versatile, can be used as a meat substitute or compliment. It can also be used as a grain or to substitute eggs in certain recipes. However you choose to use it, you’ll be amazed at the amount of nutrients it has. In just 100 grams, you’ll find 14 grams of protein, vitamin B-6, and high amounts of magnesium. Today, Great Harvest in Newtonville would like to share a delicious and savory recipe with quinoa, cilantro and lime quinoa salad.

Make Your List:

  • 1 tbs of olive oil
  • 2 cloves of minced garlic
  • ½ of diced red onion
  • 1 diced jalapeno pepper with seeds removed
  • ¼ tsp of salt
  • 1 cup of rinsed and drained quinoa
  • 1 ½ cups of chicken broth
  • 1 cup of corn, if you so choose
  • 1 peeled and diced mango
  • 1 peeled, pitted, and diced avocado
  • 1 ½ tbs of lime juice
  • 2 tbs of chopped, fresh cilantro

Here’s What You’ll Do:

  1. Heat up your olive oil in a saucepan
  2. Stir in garlic and allow it to become browned
  3. Add onion, jalapeno, and salt
  4. Cook for about 7 minutes, or until onion is browned
  5. Add quinoa, stir, and allow it to sit for a minute or so with the spices and vegetables
  6. Add chicken broth and boil
  7. Reduce heat and simmer for 15 minutes
  8. Add corn, mango, avocado, lime, and cilantro
  9. Serve warm or chilled

Helpful Tips:

  • You can serve this mixture as a salad or choose to use it as a burrito filling. Either way, you won’t be disappointed. 
  • If you don’t want to go without meat, this would also be great with some baked chicken.
