 Spring is here and a perfect meal is the perfect excuse to bring your family, friends and relatives together. Remember that creating your own pasta from scratch is very amusing, plus it will allow to shape it into different types and sizes like linguine,ravioli, tortellini and even lasagna. For this reason at Great Harvest in Newtonville, we created the following post containing a simple way to prepare pasta dough.

Ingredients

  • 3 cups superfine flour
  • 10 large eggs
  • 3 tablespoons olive oil
  • ½ cup semolina

Creating the Dough

Separate the eggs and place the whites in a resealable bag; you can store it in the freezer, and remember that you can use them to create a delicious omelette and even desserts. Now, use a large bowl to mix the flour and semolina and make a hole in the middle where you will put the yolks. Add the olive oil and 3 tablespoons of cold water to the hole and start blending the ingredients with a fork.

Rolling!

Use your hands to knead the doughl and shape it in form of a ball, once it’s fully incorporated, cover it with a damp cloth. If you have a pasta machine, this will make things easier, otherwise you can always use a rolling pin. Remember to cut your dough into 4 pieces to make it more manageable.

Elbow Grease

Dust your kitchen counter with flour and start rolling your dough, and repeat it until you have a smooth consistency. Remember that the thickness of your pasta will depend on the type of noodle you are planning to cook.
