Hot summer days create the best time to fire up your grill and invite your friends over for a barbeque. As you prepare for your barbeque day out in the sun, don’t forget to include popsicles in your list of things you will be serving. Homemade popsicles are a delicious way of providing a healthy snack that will keep you and your guests cool. Here at Great Harvest of Newtonville we have a refreshing summer popsicle recipe for you to enjoy out in the summer heat.

Mint and berry popsicles

You will need:
1 cup strawberries, cut into quarters
1 cup raspberries
1 cup blueberries
⅓ cup water
⅓ cup sugar
2 tablespoons lemon juice
2 tablespoons fresh mint, finely chopped
Popsicle molds

Instructions:

Combine all of the berries, lemon juice and mint in a bowl. Mash everything together and let it set for bit.
While you let the berry mixture sit, combine the water and sugar in a saucepan. Let the mixture simmer until the sugar has completely dissolved. Let the sugar water cool for about five minutes.
Combine the water with the berry mixture. Make sure the two combine well and pour the mixture into your popsicle molds.
Freeze your popsicles for a few hours until they are solid.
Enjoy!
