Simple Treats for a Spring Picnic

If you're excited for spring because of the warm weather and the chance to get back outdoors, this post is for you. Springtime is the perfect time for a picnic with friends and family. To help you prepare for your next picnic in the park, check out these delicious recipes you can take along in your basket.

Start With a Classic Salad With a Twist

If you've ever had a Caprese salad, you know that it offers the perfect combination of flavors along with a light and fresh feel. To shake up the traditional recipe, turn your salad into a Hasselback Caprese salad. Not only will this be just as tasty, it's also a more convenient way to make the perfect serving for each of your guests. For this you will need: 2 Roma tomatoes 1/2 a log of mozzarella 10 basil leaves 1/4 cup of balsamic vinegar 1/2 tbsp extra-virgin olive oil A pinch of salt and ground pepper

How to Make Your Caprese Salad

1. Grab your washed tomatoes and evenly slice them down the side without cutting through the bottom. 2. Cut your mozzarella into slices small enough to fit in each of the slices in your tomato. Place a slice of mozzarella in each one. 3. Next, grab your basil leaves and wedge one leaf into each opening between the mozzarella and tomato. 4. Heat up your balsamic vinegar until it thickens and then drizzle this along with your extra-virgin olive oil over your tomatoes. Don't forget to also add your pinch of salt and pepper onto your tomatoes. If you don't have the time to prepare all of your food options for your next picnic, Great Harvest of Newtonville is here to help lighten your load. They have sandwiches and other tasty treats you can order ahead of time and pick up right before your picnic! Give them a call at (617) 928-1162 or check out their lunch menu to learn more.

Take a Tasty Sandwich

If you're big on Caprese, you can also use these flavors to make some delicious picnic sandwiches. Sandwiches are the perfect option for any picnic because they don't make a mess and are easy to transport. To your Caprese sandwiches, you will need: 1 loaf of French bread 1 medium tomato cut into slices 3 slices of mozzarella 3 tbsp of your favorite pesto

How to Make a Caprese Sandwich

1. Slice your loaf of French bread in half and separate the two portions. 2. Grab the bottom slice of your loaf and spread the tomato slices and mozzarella slices over it until it's covered. 3. Grab the top part of your sandwich and spread your pesto sauce onto it before closing your sandwich. 4. Finally, grab your panini press and place your sandwich in it until the bread is nice and toasty and the cheese is melted. Cut your sandwich in half before serving.

Bake Some Classic Cookies

No picnic is complete without some sort of dessert. You can't go wrong with a classic like chocolate chip cookies. To make your own, you will need: 1 1/2 cups of softened butter 1 1/4 cups of granulated white sugar 1 1/4 cups of packed brown sugar 1 tbsp of vanilla 2 eggs 4 cups of flour 2 tsp of baking soda 1 tsp of salt 1 pack of your favorite chocolate chip

How to Make Classic Chocolate Chip Cookies

1. Preheat your oven to 350 degrees Fahrenheit. 2. Combine the butter, sugars, vanilla, and eggs in a bowl. Beat these together with a hand mixer until well incorporated. 3. Stir the flour, baking soda, and salt into your wet mixture. You may want to use a wooden spoon for this since the dough will start to get thicker as you incorporate the dry ingredients. 4. Next, mix your chocolate chips into your dough making sure they're evenly distributed. 5. Grab a couple of spoons and use these to to create round drops with the dough. Drop these onto an ungreased cookie sheet making sure to leave at least 1 1/2 inches between each dough ball. 6. Bake your cookies for 12-15 minutes or until they're golden brown. Let the cookies cool on the cookie sheet before removing them and placing them on a wire rack to cool further.
