Chia Breakfast Pudding with Vanilla Almond Milk
You’ll need:
2 cups of unsweetened almond milk, you can use vanilla or chocolate almond milk if you choose
½ cup of chia seeds
½ teaspoon of vanilla extract
1 to 2 teaspoons of honey
Use seasonal fruits for topping (blueberries, nectarines, plums are just some suggestions)
To prepare it:
Combine all ingredients in a bowl
Stir well until the mixture begins to thicken
Cover in the refrigerator for a few hours, or overnight
Top with your favorite fresh fruits and serve
Peach Oat and Chia Smoothie
Ingredients:
2 ripe peaches, cut into quarters without pits
1 tablespoon of chia seeds
¼ cup of rolled oats
½ frozen banana
¼ cup of fresh orange juice
½ cup of unsweetened or vanilla almond milk
If more sweetness is desired try 1 tablespoon of honey, maple syrup, or agave
Directions:
Place all ingredients in the blender
Let them sit for around 10 minutes in order for the oats and chia to soak
Blend until the smoothie reaches your prefered level of smoothness
Add more banana to thicken
Add more orange juice or almond milk to thin
Serve immediately
