Are you looking for a new breakfast recipe? Overnight oats are quick and filling. They only take a few minutes to mix up the night before. And they are nutritious. Since they require no cooking overnight oats are a great summer go-to breakfast option.
Orange & Vanilla Overnight Oats
This recipe makes 4 generous portions
1 3/4 cup / 400 ml old fashion oats
1 tsp vanilla extract
1 3/4 cup orange juice
1/2 cup sunflower and pumpkin seeds
1 cup water for soaking
4 tbsp shredded toasted coconut
Directions
The night before, mix up the oats, vanilla, and orange juice. Stir to combine. In another bowl, add the seeds and enough water to cover the seeds. Place both bowls in the refrigerator to sit overnight. In the morning, take out 4 bowls or jars and place a a few spoonfuls of the soaked seeds into each bowl. Scoop the oat and juice mixture into the bowls equally. Top each bowl with more seeds. Finish off each serving by adding some fresh fruit and lightly toasted coconut. The oat and seed mixture will keep in the refrigerator for up to 3 days.
Tips
You can use certified gluten-free old fashioned oats if you are trying to avoid gluten. 1 3/4 cup of orange juice is about the amount of juice from 4 fresh oranges. You can top these oats with fresh fruit in the morning for serving.
