Tuna With Asian Stir-Fried Veggies
This recipe is spicy, fresh and full of nutrients and low in fat, as well as being quick to prepare. A perfect lunch or dinner treat that packs in loads of healthy veggies:
- Heat a dash of sesame oil in a wok or large saucepan, then throw in a finely chopped red chili.
- Roughly chop vegetables of your choice and toss them into the pan. Zucchini, carrots, broccoli and bell peppers work well and add a nice crunch to the dish. Try including veggies with a variety of colors – this makes the dish look more inviting, as well as making sure that you and your family get a wider range of nutrients.

- Add a bunch of cilantro, plus the juice and rind of one unwaxed lemon.
- Blend until the mixture is fully blended, but not too runny.
- Season with salt to taste.

Healthy Roast Vegetable Pasta
- Chop the veggies of your choice into generous chunks – eggplant and zucchini work well roasted and place in a deep oven dish, like a lasagna dish or something similar.
