  • Heat a dash of sesame oil in a wok or large saucepan, then throw in a finely chopped red chili.

  • Add a bunch of cilantro, plus the juice and rind of one unwaxed lemon.
  • Blend until the mixture is fully blended, but not too runny.
  • Season with salt to taste.
